Overview
A leading resort is seeking an experienced Food & Beverage Controller to drive cost efficiency, ensure inventory accuracy, and enhance profitability across all F&B outlets.

Key Responsibilities
Conduct regular physical stock counts and reconcile variances.
Ensure profitability and cost control across all F&B operations.
Implement and monitor standardized recipes, portion controls, and menu engineering.
Oversee purchasing, receiving, supplier sourcing, and price negotiations.
Calculate and track key metrics: Food Cost %, Beverage Cost %, Variance %, Consumption Trends.
Perform theoretical vs. actual cost analysis to identify waste, pilferage, or process gaps.
Support budgeting, forecasting, and financial planning.
Monitor and control voids, discounts, and complimentary meals.6
Manage and maintain accuracy in POS and inventory management systems.
Develop and update SOPs for ordering, receiving, storage, and issuing.
Provide data-driven insights to support strategic operational decisions.
Analyze profitability for events, banquets, and catering operations.
Manage high-volume operations and seasonal fluctuations, including internal transfer pricing.
Experience with POS and Material Control (MC) systems is mandatory.
